Cooked Radish, Potato, Carrot in a Lettuce Wrap

 


Today's kitchen creation is a lettuce wrap filled with a concoction of cooked radishes, potato, carrot, celery and onions. I must say this was surprisingly delicious. I've never cooked radishes before. Well, I'll be doing that again. Yum!!!

Ingredients:
Radishes (about 5)
Potato (about 1/2 a potato)
Carrot (one)
Celery (1 stalk)
Purple Onion (about 3 tbsp)
Minced garlic (1 tsp)
Olive oil (3 tbsp)
Salt (1/2 tsp)
Romaine lettuce leaf

Start by slicing and chopping radishes, potato, celery, carrot and onion and put in a bowl.

Warm skillet and pour in olive oil. When olive oil is warm add garlic and salt. When the garlic and olive oil simmers for a few seconds (don't let it burn).

Add ingredients from your bowl and stir until potatoes are cooked and brown (about 15 minutes).

Spoon some into a piece of washed romaine lettuce leaf.

You could also make a taco out of a corn tortilla, spoon onto a salad, serve with pasta. There is a number of ways to enjoy this "concoction.
