Today I woke up feeling a bit under the weather. A good day for some smooth, comforting, and nutritious soup.
I looked in my fridge and saw a sweet potato, a bag of baby carrots and an apple.
I love spices, especially when I'm a bit under the weather. I had curry, turmeric, cumin and ginger on my spice rack.
Great makings of a delicious and comforting soup.
Ingredient List:
- 1 Sweet potato
- 1.5 cups of baby carrots
- 1 Honey-crisp apple
- Salt
- Curry
- Tumeric
- Cumin
- Ginger
Directions:
- Boil water in a stock pot and add salt
- Peel sweet potato and cut into cubes and toss into the boiling water
- Add carrots
- Cut apple into small pieces and add to water
- Boil rapidly for 10-15 minutes
- Add generous amount of spices according to taste
- Simmer and stir occasionally for 30-45 minutes until contents are soft
- Mash contents with a potato masher and continue to simmer until desired consistency
- Pour mixture into blender and blend until smooth
- Enjoy!
