I prepare almost all of my meals ahead of time and freeze. Not only does this practice help me out a lot with my busy schedule, it also helps me with portion control; AND I always have healthy meals on hand. WIN WIN WIN!!!
Today’s meal was something that I prepared ahead of time and pulled out of my freezer. It was absolutely delicious!
I took a package of 5 beautiful lamb chops and cooked in my favorite cast iron skillet. I love cooking in cast iron. I poured a small amount (probably about 2 tbsp) in the bottom of my skillet. I use olive oil a lot. I lightly seasoned the lamb chops with a little salt, pepper and cooked until browned on the outside and medium rare on the inside.
I then took the juice from the bottom of the lamb chops and added some water and boiled some broccoli for about 10 minutes. That saved me from having to pull out a new pot to wash laster and it also seasoned my broccoli perfectly!
Then I cooked a large russet potato in the microwave with the skin on and sliced it into 5 equal parts.
What I ended up with was everything I needed to put together 5 perfectly proportioned meals that I put in a container and froze for future use.
My husband and I just started traveling in our RV. I hope to post more about our travel adventures soon. Because of my food sensitivities, I am limited on what I can eat on the road. With a freezer full of prepared meals all we need to do is pull over and heat up one of our delicious meals and we are ready to continue our journey.
