RV Chicken Thighs & Summer Squash

In addition to cooking and playing the violin, I also like spending time in our RV with my husband, Bill, and our German Shepherd girl, Kono. We recently remodeled our RV and this was our first meal in the newly renovated kitchen.
I cooked this meal on a Hamilton Beach 3-in-1 Electric Indoor Grill + Griddle. Let me say that it worked perfectly. I couldn't have been more pleased with our first meal on the road. I made grilled chicken thighs and summer squash. 

I heated up the right side of the griddle to 400 degrees and placed six chicken thighs sprinkled with one of my favorite poultry seasoning. I turned the thighs frequently to ensure that they were cooked evenly. 

While the chicken thighs were cooking, I sliced up a summer squash and placed on the left side of the griddle with a spoon full of my favorite buttery spread. I use Earth Balance Soy Free spread because it's gluten free, dairy free and soy free (this is because of my food allergies). I cooked the squash on about 300 degrees and turned frequently. While the chicken and squash was cooking I made a quick and very simple salad with romaine lettuce and radishes. 

 And there you have it! Easy, delicious and healthy cooking on the road. Clean up was super easy too!
