Cajun Catfish Salad


This is such a quick and easy healthy lunch or dinner. The cajun spices give it a kick and it's a perfect balance of protein, greens and carbs.

Ingredients:
Frozen catfish filet
1 cup rice
Salad greens
Tony Chachere's creole seasoning
1 tbsp sesame oil

Directions:
Put 1 cup of rice and 2 cups of water in your rice cooker and set to cook. 

While your rice is cooking heat a small skillet and pour in a tablespoon of sesame oil (other whatever oil you have on hand). 

Generously sprinkle the catfish with the Tony Cachere's seasoning. Cook until done (about 10-15 minutes). 

Put a generous amount of salad greens on the bottom of your plate. Spoon your rice in the middle of your plate. Then place your fish filet on top of your plate.
